Square cut from the rib end of the belly, our traditional joint with bone-in from the rib end melts in the mouth when slow cooked. Our butchers score the rind for you so all you need to do is rub in plenty of salt, olive oil and a squeeze of lemon juice just before cooking to make it extra crispy.
For the best crackling, cut off the rind just before the end of roasting and whizz under a hot grill for 5 minutes
